Pandan Cake Recipe
The aromatic fragrant from pandan essence combined with fluffy sponge cake, this pandan cake recipe will make your coffee time enjoyable.
Hygge is a word in Danish which has meaning of creating a warm atmosphere and enjoying the good things in life with good people or… by yourself. It could be dinner together with family at Saturday night, or reading a good book at library by yourself, sitting with your favorite person while watching netflix, and many other activities on your choice. I asked my Danish friend what is his hygge and he said watch sunrise with a glass of coffee. He believes it so peacefully and also inspiring to see the first sun in the horizon.
When I was living in Denmark, I simply found my hygge by sitting in the park and enjoy my coffee with delicious homemade pandan cake. It makes me relax and more productive at my work. Take a 15 minutes break to enjoy the essential of life with one of my favorite cake and coffee really make my day and ofcourse….. I will share the recipe to you so you could enjoy your hygge too 🙂
This recipe is super easy to make even If you are a beginner baker. So let’s put our apron and bake it 😊
Pandan Cake Recipe
Ingredients
- 4 Eggs
- 150 gr Sugar
- 40 ml Coconut milk
- 35 ml Vegetable oil
- 1 tbsp Pandan Essence
- 40 gr All purpose flour
- 10 gr Corn starch
- 10 gr Baking powder
Instructions
- Preheat your oven to 180 degree celcius and grease your baking pan with some butter. For this recipe you need to mix eggs and sugar until become white in colour and double in size. It takes approx 8 minutes. You could use stand mixer or hand mixer, just make sure you use medium speed to beat the egg. While your eggs being mixed let's prepare the dry and wet ingredient. For the wet ingredient, mix the coconut milk, vegetable oil and pandan essence in measuring cup and stir it well. And for dry ingredient, mix the flour, corn starch and baking powder in the bowl and don't forget to sift it.Add your wet and dry ingredient one by one to you egg mixture. Mix it until well combine
- Pour you cake batter into your baking pan. (I am using 25 diameters baking pan) Tap your baking pan several times to release the air buble from the cake batter. Bake it for 35 minutes.
- Once it's done, put the cake out from the oven and place it on cooling rack to cooling down. Do not take the cake out from the pan while still hot or it will broke. Slice it on your choice.
- Enjoy it with coffee or tea 🙂
Notes
- Make sure all the ingredient is in room temperature. If you place your egg in the fridge, let it out about 30 minutes before using it.
- The cake contains coconut milk which mean it will no stay longer than 3 days. You could wrap the remaining cake with plastic wrap and put it in the freezer. If you want to eat it, take it out freezer and put it the the refrigerator. Do not microwave it.
- When the cake is cooling down, place the pan upside down on wider plate. If you grease your baking pan well enough, it should come out easily but if you find it difficult, you could place butter knife between the edge of the cake and the pan, rotate it gently to help the cake not stick in to the pan.
- Pandan essence is easly found in any Asian store. Place it in refrigerator after open the bottle.
